I think meatloaf gets a bad rap. It’s always spurned in movies or television as that horribly dry, brutal thing mom makes in the kitchen that everyone else must endure. But I’ve loved it since I was little and always wanted a signature recipe. A dear family friend created and passed along to us this healthy turkey meatloaf. And it’s easily a favorite weeknight dinner option. The choice of turkey over beef makes it not feel as heavy as other traditional versions. The one change I made was adding in a bit of onion. INGREDIENTS
- 2 1/2 lbs lean ground turkey
- 2 eggs
- 1/2 c cocktail sauce (more for topping, if desired)
- 1 1/2 tsp horseradish
- 1/4 c brown sugar
- 3/4 c oatmeal (or bread crumbs)
- 1 small yellow onion, diced
DIRECTIONS
- Preheat oven to 375F
- Prepare loaf pan with non-stick cooking spray
- In a large bowl combine all ingredients until well mixed
- Place mixture in loaf pan and bake for 40-45 minutes
- Remove from oven and allow to rest for 5 minutes
- Slice and serve immediately
