baked apple ice cream sundae

This recipe is like the best Yankee Candle smell come to life. Everything good about fall is summed up in the Apple Cinnamon scent, and these baked apple bowls bring that right to the kitchen. Incredibly simple and minimally involved, this dessert can be a low-carb alternative to the full apple pie extravaganza (note: I never said anything about low-sugar, so don’t hold me to that). See full recipe below.
Ingredients
Fresh apple (I used Cortland)
1 tsp brown sugar
½ tsp cinnamon
½ c vanilla ice cream
Caramel for drizzling
Directions
Preheat oven to 350
Cut ¾ of an inch from the top of the apple
Using a melon baller, remove the inside of the apple (I removed enough to get rid of the seeds)
Sprinkle brown sugar and cinnamon along the inside of the apple
Bake for 12-15 minutes
Remove from oven and allow to cool
Scoop vanilla ice cream into apple bowls and top with caramel
Serve immediately
