Have you discovered the wonder that is spaghetti (summer) squash? It’s one of those things you have to see to believe. A healthy vegetable that acts like carbo-loaded pasta? Has to be impossible.
Okay, so maybe it’s not just like your favorite italian dish, but the result is tremendous based on nutritional content. I’ve used the vegetable many times as a pasta substitute, but this time I wanted to take it a step further into Italian territory and make a pizza.
This recipe gave me the basics of making the crust and then I added my chosen toppings. I used extra sharp cheddar cheese and pesto sauce to make a savory pie.
It passed the husband test with flying colors. Next time, though, he’s requested meat.
