You know how everyone says that red wine and chocolate go well together? Well, forget having to take a bite then a sip. Now you can have it all at once! This red wine chocolate loaf is the height of decadence. It makes for quite a dense treat as the alcohol doesn’t allow the mixture to rise very much. But every morsel is packed with flavor and a hint of boozyness. Surprisingly, it’s not overly sweet, so we served alongside a couple scoops of espresso ice cream. Ingredients
- 8 tbsp butter {room temperature}
- 3/4 cup brown sugar
- 1/4 cup sugar
- 2 eggs (room temperature)
- 3/4 cup red wine
- 2tsp vanilla
- 1 – 11/4 cups of flour
- 1/2 cup of dark cocoa powder (could use regular cocoa powder as well)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
Directions
- in a bowl combine 1 cup of the flour with the dry ingredients
- in the bowl of a stand mixer cream together the butter and sugars
- add the eggs one at a time{scrape the bowl between additions}
- gradually add in the wine and vanilla
- stir in the dry ingredients (if the batter is too wet add a bit of the extra flour)
- spoon into a buttered loaf pan
- bake @350 for 60 minutes
