To be honest, I fell off the baking (and cooking) wagon while pregnant. And I’ve been slowing making my way back into the groove. While it can be intimidating to dive into a new confection, I find it pretty calming as well as satisfying to putz around our kitchen. With that said, ‘healthy’ recipes don’t abound in my blog archives. But as part of our #obfwellness series I’m turning that around. These healthy fudge brownies are the start of a new trend: indulgent clean eating. I’ve adapted a recipe from here. Scroll down for full directions (and to find out the secret ingredient).

Ingredients

1 15-oz can black beans, rinsed and drained
3 eggs
3 tbsp coconut oil
1 tsp vanilla
¼ cup unsweetened cocoa powder
⅔ cup sugar (or the equivalent of  a sugar substitute like Stevia)
½ tsp baking powder
¼ tsp salt
½ cup semi-sweet chocolate chips

Directions

Puree black beans in food processor or blender
Mix together black beans, eggs, oil, and vanilla
In a separate bowl combine cocoa powder, sugar, baking powder, and salt
Blend the wet ingredients and the dry ingredients then stir in chocolate chips
Pour into a greased 8×8 pan and bake about 35-40 minutes at 350 degrees
Cool slightly, cut, and serve (I dusted mine with powdered sugar for a nicer finish)
