A couple of weeks ago I acknowledged the fact that I am trying to steer away from desserts that are “all things chocolate” (see this post). This is my second venture into the lighter world of treats. And I have to say, I am loving the citrusy notes of these Lemon Crinkle Cookies. I swapped the lemon zest for lime and the balance absolutely worked! They come out the perfect bite-sized morsel and go very well beside a cup of hot tea. In most of my cookie recipes I tend toward parchment paper as opposed to a greased pan. I find that the cookies bake more evenly and the texture is preferable. Bake up a batch and bon appetit!
